The main steps of the research can be summarized as follows:

1. Detailed analysis of the production and distribution chains for food products

2. Planning of project tracking with various actors along the supply chain

3. Inserting data logger and tracking technologies (eg black box) in several shipments of goods

         

4. Withdrawal of data-logger/black-box (in USA from the "Wine Supply Chain Council) and sending data to the DIEM Department, Faculty of Engineering, University of Bologna

5. Detailed data analysis and communications to the company

6. Reconstruction in the laboratory of transport conditions (temperature, humidity, vibration) by using a simulator

7. Organoleptic analysis (sensorial) and laboratory analyses of the impact on product quality due to the transport conditions

        

8. Sustainability assessment of the wine supply chain, through analysis Life Cycle Assessment (LCA)
